The Problem This Solves

Most hospitality operators already know something is wrong. The floor is busy, but the margins aren't there. The team is working hard, but the service isn't consistent. Trade is unpredictable in ways that are difficult to explain. The owner is doing everything, and nothing is improving.

The problem is rarely a lack of effort. It's a lack of clarity.

When you're inside a business every day, it's almost impossible to see it clearly. You're too close to the operation, too invested in the decisions you've already made, and too exhausted to step back and ask the questions that would tell you what's actually going on. Every day without that clarity is a day when the underlying issues compound quietly, in your margins, in your team, in your guest experience, and in your capacity to keep going.

The Hospitality Health Check gives you that clarity. One structured session. One honest written diagnosis. A clear picture of where you are, what's working against you, and what to do first.

What’s Included

Before the session

You complete a short questionnaire and share basic business information. This is not onerous; it takes most clients around 20 minutes, but it allows the session itself to go immediately to the issues that matter rather than spending time on background.

The questionnaire covers your sales figures, food and beverage costs, labour costs, menu, opening hours, staffing structure, and the specific challenges you're currently facing. Everything you share is completely confidential.

During the session

A structured 60- to 90-minute diagnostic session, conducted by video call, works systematically through every dimension of your business:

  • Concept:
Is the offer clear, consistent, and commercially positioned?

  • Customer:
Do you know who you're serving, and are you serving them well?

  • Menu:
Is it working for your kitchen, your margins, and your guests?

  • Pricing:
Are you leaving money on the table or pricing yourself out of the market?

  • Operations:
Where is the friction? What is costing you time, money, and energy?

  • Team:
What's behind the performance and consistency issues?

  • Marketing:
How visible are you, and is it reaching the right people?

  • Owner workload:
What depends on you that shouldn't, and what does that cost you?

  • Immediate risks:
What needs attention before anything else?

  • Best next move:
Where does the highest return on your time and effort actually sit?

This is not a generic checklist. It is a directed, experienced conversation that goes where the evidence leads.

After the session

Within five working days of your session, you receive a concise written report covering the following:

  • Overall business health score:
A clear, honest assessment of where you stand

  • Main diagnosis:
    The core issue, stated plainly

  • Top 3 issues:
The problems most urgently affecting your business

  • Top 3 opportunities:
Where the genuine upside sits, and why

  • Recommended action plan:
    Specific, sequenced, and immediately actionable

  • Suggested next steps:
What to do yourself, what to get help with, and what, if anything, a longer engagement with Atelier Sawyer would look like

The report is yours. There is no obligation to take any further action with us. Many clients find it gives them everything they need to move forward on their own.

Who It’s For

The Hospitality Health Check is the right starting point if:

  • You're preparing to launch and want an expert assessment before you commit fully

  • You're trading but not profitable, and you can't identify exactly why

  • Your business runs – but only because you're always there

  • You're considering a significant change: a pivot, a rebrand, an expansion, or a closure

  • Your team isn't performing consistently and you're not sure where the problem lies

  • You've been given conflicting advice and need someone to cut through it

  • You want an honest outside perspective from someone who has been inside this industry at every level

It is not for operators looking for a quick fix, a motivational conversation, or validation of a decision already made. It is for people who genuinely want to know the truth about their business, even if some of it is uncomfortable.

Why This, and Why Benjamin

A business diagnostic is only as useful as the experience and honesty of the person delivering it. Benjamin Sawyer has spent thirty years inside hospitality — from a pot washer at fifteen to running two restaurants simultaneously at Selfridges, from turning The Sun Inn in Bethnal Green from £10,000 to £800,000 in annual revenue to opening and selling a bar in Spain for three times its purchase price within a year. He has been a chef, a floor manager, a general manager, an operations trainer, and an owner. He has built businesses, lost businesses, and started again. He is not a hospitality academic. He is someone who has stood in the positions his clients are standing in and who gives the same honest assessment to every client that he would have wanted to hear himself. There are no comfortable answers in the Hospitality Health Check. There are only accurate ones.

Frequently Asked Questions

  • The free consultation is a 30-minute conversation to understand whether there's a fit between what you need and what we offer. The Hospitality Health Check is a structured, prepared, expert diagnostic of your entire business with a written report delivered afterwards. One is a conversation. The other is a service.

  • Yes – the pre-session questionnaire is an important part of the process. It allows the session itself to go immediately to substance rather than spending time on context-gathering. Most clients complete it in around 20 minutes. You'll also be asked to share basic financial figures: your sales, food and beverage costs, and labour costs. You don't need to present anything; just have the numbers available.

  • If you're uncertain whether the Health Check is the right starting point, download the free Hospitality Self-Assessment first. It will give you a preliminary picture of where the main issues might sit. If it confirms that there are real questions to answer, the Health Check is the right next step.

  • The written report includes suggested next steps, which may include a recommendation that a longer engagement with Atelier Sawyer would be beneficial. If that's the case, we'll say so and explain why. But it's a recommendation, not a pitch. The Health Check stands entirely on its own, and many clients use it as a standalone service with no further engagement. You are under no obligation of any kind.

  • You can join by video call using either Google Meet or Zoom, whichever you prefer. You'll receive a calendar link to book your session after purchase, and the pre-session questionnaire will be sent at the same time.

  • That's entirely up to you. The report is yours. Some clients implement the action plan themselves. Some return for a follow-up session. Some move into one of our subscription packages. Some simply take the clarity and move forward independently. All of those are valid outcomes.

  • The fee is non-refundable once the session has taken place, as the work – preparation, session, and report – is completed in full. If for any reason you need to cancel before your session, please give at least 48 hours' notice and we will reschedule at no charge.

£297. One session. A clear diagnosis and a written plan.

No monthly commitment. No obligation beyond the session itself.
